Strawberry & Dulce de Leche Mille Feuille

When I was little my mom bought me a delicious mille feuille at a pastry shop in the city we used to live in. It was made with layers of puff pastry, dulce de leche, custard and nuts. It is still one of my favorite desserts and every time I visit that city, I make a “pit stop” at that place where everything still tastes just like in my childhood. 

Strawberries are my favorite fruit, so I decided to take inspiration from a classic dessert and combine it with the flavors I love.

PUFF PASTRY INGREDIENTS

PUFF PASTRY PREPARATION

  1. Preheat the oven to 220 C / 430 F.
  2. Take the puff pastry out of the fridge.
  3. Flour your kitchen counter.
  4. Spread the dough on the table and cut it into small squares to get 12 pieces.
  5. Put the squares on a baking sheet.
  6. Put another baking pan on top of the dough to prevent it from swelling.
  7. Take the puff pastry to the oven for approximately 15 minutes or until golden.

CREAM INGREDIENTS

mantequilla - butter

crema de leche - heavycream

{COLD HEAVY CREAM}

½ CUP

CREAM PREPARATION

  1. In a pot put half a cup of milk with sugar and vanilla paste and let it boil.
  2. Separately, add the remaining milk, egg yolks and cornstarch in a bowl and mix until combined.
  3. Add the boiling milk to the egg yolks mixture and combine.
  4. Add the mixture to the pot and take it to medium heat mixing it constantly with a whisk until it starts to thicken. Once it thickens, lower the heat and cook for another two minutes.
  5. Remove from heat and transfer to a bowl.
  6. Add the butter and combine.
  7. Cover the cream with plastic wrap to prevent a skin from forming and place it in the refrigerator.
  8. Once the cream is cold, beat it until it has a creamy consistency, finally add the cream until the preparation is well combined.
