No-Bake Golden Berry Cheesecake

Golden berry has always been a fruit that I love, especially when it is prepared in jam… for me it is a pleasure to eat a spoonful of golden berry jam with a piece of fresh cheese.Â
They originate from South America, and this is perhaps the reason why it is an easy fruit to find in my native country Colombia. However, now that I live in the United States it is more difficult for me to buy them, so every time I go to the supermarket and see them on the shelves, I don’t hesitate to buy about 3 or 4 boxes to prepare them in preserves. That way I always have them available in my kitchen.
 Today, I have decided to recreate golden berries + fresh cheese through an easy and delicious dessert that I know many people love, Golden Berry No-Bake Cheesecake. This preparation is good for 8 portions. However, you can make half the amount if you don’t want to make so much, use a large baking dish or mold and then cut the dessert in pieces, or use smaller glasses and make them for a dessert table.

CREAM Ingredients
{CREAM CHEESE}
2 BARS (500 G)
{CONDENSED MILK}
1 CAN
{HEAVY CREAM}
1 CUP
{UNFLAVORED GELATIN}
1 ENVELOPE
CREAM preparation
- Hydrate the gelatin by adding it into a bowl with cold water (the amount of water has to be equivalent to 5 times the weight of the gelatin).
- Blend cream cheese, condense milk, and heavy cream until creamy and well blended.
- In a pot, heat up some of the mixture you blended and add the unflavored gelatin to dissolve.
- Serve the mixture in the cups you are going to use and refrigerate them for at least 3 hours.

PREPARATION
Take a saucepan to medium heat and cook both ingredients, with a spatula mix constantly for about 10 minutes until it thickens.
CRUMBLEÂ Ingredients
{GRAHAM CRACKERS}

{MACADAMIA}
¼ CUP (YOU CAN USE ANY NUT YOU LIKE)
{BUTTER}
3 TBSP MELTED BUTTER
CRUMBLE PREPARATION
- Preheat the oven to 180 C / 350 F.
- With the help of a food processor, process the cookies with the macadamia until well crushed. If you don’t have a processor you can put the ingredients in a bag and crush them with a hammer or rolling pin.
- Add the cookies and the macadamia to a bowl.
- Add the melted butter and mix well.
- Put parchment paper or a silicone mat on a baking sheet and spread the mixture on top.
- Bake for 10 minutes.
ASSEMBLY
- Take the cheesecake base from the fridge.
- Add a layer of the Golden Berry compote and add a layer of crumble.
Finally decorate however you like. I decided to decorate with dried edible flowers.
